Long Bean Rice(豆角饭)
I found some long beans in the local farmer's market last weekend and the first thought that came to my mind is long bean rice! I call it "tao kok fan" in Cantonese (豆角饭) and it uses 长豆 (chang dou - literal translation for long bean in Chinese). This recipe is very versatile. You can easily add more ingredients such as shiitake mushroom or replace the chicken thigh with roast pork. It goes very well with a fried egg on top too! :)
Ingredients:
150g of cubed chicken thighs (or pork) 1 cup of white rice 1 cup of water 1 cup of chopped long beans A handful of dried shrimps 2 cloves of minced garlic 2 bird eye chilies Some oil Marinade: 1 tablespoon + 1 teaspoon soy sauce 1 tablespoon + 1 teaspoon sweet soy sauce 1 tablespoon + 1 teaspoon oyster sauce 1/2 teaspoon of sesame oil A dash of white pepper Soak 1 cup of white rice with 1 cup of water for an hour. Soak the dried shrimps in hot water for about 15 minutes. Then, coarsely chopped the dried shrimps. Marinade the chicken with the marinade ingredients. |
