Peanut Cookies
Haven't been baking since baby O was born. Since Chinese New Year (2017) is approaching, I called my Mum, asked for her famous peanut cookies recipe (only 4 ingredients plus an egg wash! Woo hoo!) and decided to spend some time baking these goodies after Owen went to bed. Feels great to be back in the kitchen baking again! I even made a Mickey Mouse peanut cookie for Owen. I gave him a small bite and yay, I confirmed that he does not have peanut allergy. LOL.
Mix the ground peanut, flour and (sieved) sugar in a large mixing bowl. Gradually add the oil and knead lightly until the ingredients come together. You don't have to finish using the oil and don't overknead! I used canola oil. You can use whatever oil you have at hand - corn, vege, peanut etc.
If the dough is too dry and crumbly, add more oil. If the dough ends up being too wet/oily, add some flour. |
Shape the dough into small balls. Then, lightly flatten them on the baking tray lined with parchment paper
For half of the batch of cookies, I took the back of the pen cap and imprinted "holes' on them. Haha. For the other half, I placed half a roasted peanut on top. Then, brush the top with egg wash (I used pure egg yolk, but I might add some egg white or water to it the next time I make this again. I think this prevents the cookie from having golden orange patches of color ) |
