Bun Thit Nuong (Vietnamese Grilled Pork with Vermicelli)
I have always thought that Vietnamese "bun" dishes are healthy and yummy.
I am not familiar with Vietnamese cuisine and this is what Wikipedia says:
Bún chả is a Vietnamese dish of grilled pork & noodle, which is thought to have originated from Hanoi, the capital of Vietnam. Bun cha is served with grilled fatty pork (chả) over a plate of white rice noodle (bún) and herbs with a side dish of dipping sauce.
Bún chả is popular in the Northern region of Vietnam. In the South, a similar dish of rice vermicelli and grilled meat is called bún thịt nướng.
I used the grilled pork recipe from the Ravenous Couple. Unfortunately, because I was lazy to fire up the grill, I stir fried the pork instead :)

First, I used pork belly instead of the suggested pork butt or shoulder. I think either one would work.
I thinly sliced the pork and marinaded the pork for about an hour.

- 1.5 lb pork belly
- 1/4 cup minced Lemongrass
- 1/4 cup sugar
- 2 tbs fish sauce
- 1 tbs ground pepper
- 2-3 cloves minced garlic
- 2-3 minced shallots
- 3 tbs sesame oil
- 2 tbs thick soy sauce
Choose your veggies and herbs!
I used lettuce, carrot, mint and cucumber.
Thinly slice them.

Next, I stir fried the pork belly.
p/s: The Ravenous Couple suggested grilling large piece of thinly sliced pork using a grill basket. I think this is a great idea!

Assemble your "bun"!
I chopped some peanuts to add some texture to the dish.
For the dipping sauce, I mixed fish sauce, lime juice, sugar, water, some shredded carrots and mint to taste. I usually go a little lighter on fish sauce because I don't quite like a heavy fish sauce taste in my dish.
