Ingredients:
For the rice noodles, cook them in boiling water for no more than a minute or two. Remove them and wash them under cold water. This stops the noodles from cooking further. Lastly rinse then under hot water. This helps to keep the noodles sticky together and that is what you need for a spring roll!

- Lettuce
- Shrimp
- Pork belly (optional)
- Sliced cucumbers

I used shrimp with shells on because I think boiling them with their shells give them more taste.
Make sure you remember to devein the shrimps when peeling off the shells.
If you are planning on using pork belly, boil the pork belly in a pot of water for about 20 minutes.

Remove it even though it might look like it is still slightly hard. It will soften when you start wrapping, trust me :)

(I have tried placing it on a plastic plate or my wooden cutting board, and the wet rice wrapper tend to stick to them.)
Place the ingredients on the wrapper.

Start rolling and wrap them up!
I mixed peanut sauce (love chunky ones!), water and hoisin sauce (2:4:1 ratio)
Microwave them for about 15 seconds.
Next, add in some fish sauce. I think it makes the entire sauce taste much better!

Tip: If you are doing this ahead of time for a picnic, wrap each roll individually with a cling wrap. This helps to keep the roll moist and keeps the wrapper from "hardening".
