Jambalaya
Jambalaya: (Wikipedia) Louisiana Creole dish of Spanish and French influence. It is also, with the spelling jambalaia a provencal dish.
I have often seen different versions of jambalaya in restaurants. Some have tomatoes in the dish, some don't; some are slightly on the wetter side, some are drier with rice crust; some are loaded with rice, some barely had any rice in it, some spicy, some not etc. The commonalities however would always be the trinity of bell pepper, celery and onions in the dish.
I looked up Wikipedia and Creole jambalaya looks similar to what I am attempting to cook here; rural Creole jambalaya has no tomatoes in the dish the idea being the farther away from New Orleans one gets, the less common tomatoes are in dishes) and in Cajun jambalaya, the meat/veggie is cooked separately from the rice.
Regardless, after a few attempts tweaking different recipes, I think I like this recipe best. It is slightly drier (hence, lots of burnt rice crusts!!), has some tangy tomato taste and I added more rice (love rice! haha).
Best paired with the Hank William's Jamablaya! :)
