Kane and mushroom quinoa
My long time childhood friend, Ting, recently introduced me to quinoa and I have been hooked ever since.
Quinoa is a gluten-free (pseudo?) whole grain with good balance of protein, fiber and iron.
On top of its nutritious value, it has a nutty taste with a unique texture!
I read that each grain of quinoa is usually coated with saponin, a bitter, soap-like substance that acts as a natural insect repellent. Because of that, I rinse my quinoa with water before I used them (even though quinoas sold nowadays are usually pre-rinsed). If you are paranoid like me, use a sieve to help you out here.
Also, unlike other whole grains, the germ — the nutrient-rich middle layer of a grain — covers the entire kernel of quinoa. As quinoa cooks, the germ separates from the kernel, creating little white rings. When you see these rings, you know the grains are fully cooked!

I cooked 1/2 cup quinoa with 1 cup chicken broth in low heat. Simmer for 15 min and then leave it for 5min.
Meanwhile, in another pan, I stir fried garlic, onions/shallots, mushroom and kale in butter :)
When the quinoa is done, fluff with fork.
Lastly, I added in the cooked quinoa into the pan.
Voila, 30 min meal!
