Lentil Soup
I tried lentil soup at Lake Hotel Yellowstone and thought that it is a great dish to try cooking at home.
Easy cooking and tasty! Vegan too! :)

Ingredients:
It is a good idea to soak the lentils for an hour or two before cooking. The lentils would soften faster during the cooking process.
- Olive oil
- 1 cup finely chopped onion
- 1 cup finely chopped carrot
- 1 cup finely chopped celery
- 2 cloves of chopped garlic
- 1 teaspoons kosher salt
- 1/2 pound lentils, picked and rinsed
- 1 cup peeled and chopped tomatoes
- 1 quarts chicken or vegetable broth (I think water would be fine too)
- 3/4 teaspoon freshly ground coriander
- 1/2 teaspoon freshly ground cumin
- Black pepper to taste

Heat up some oil in the dutch oven (or a pot would work perfectly fine too).
Add onion to sweat.
Then add carrot, celery and garlic.
Cook for approximately 5 minutes.
Add tomatoes, coriander, cumin, black pepper and salt.

Add broth and bring it to a boil.
Once soup is boiling, reduce the heat to low and simmer until lentils are tender.
This will take about 1 hour (I used green lentils which takes a longer time to cook, but they keep a firm texture after cooking)

You can use a stick blender to puree to your preferred consistency.
I left mine as it is.
Serve with some crackers.
