Bak Kut Teh (肉骨茶)
Bak Kut Teh / Pork Bone Tea (肉骨茶) is a herbal soup very popular in Malaysia / Singapore. It consists of pork bone / ribs simmered in a soup of herbs like dang gui, star anise, cinnamon, pepper, and a bunch of other spices. Don't bother going to the herbal store and buying the herbs; pre-packaged instant Bak Kut Teh herbs are readily available in Chinese markets! Even though this soup is called "Bak Kut Teh" (in Hokkien) which translates to "pork bone tea", it does not contain any tea. The "tea" name was coined because Chinese tea is usually served with the soup as a mean to cut down the pork-y richness of the soup.
