Ayam Pongteh (Pongteh Chicken)
Ayam pongteh is a Nyonya dish particularly popular in Melaka.
(Peranakan Chinese or Baba-Nyonya refers to the descendants of the Straits Chinese who inter married the local Malays and adpoted the Malay culture. Nyonya cuisine thus feature both the Chinese and Malay influences. Think of Chinese ingredients with different spices and cooking techniques of the Malays!)
So, I recently got some gula melaka and decided to try it out.
Using gula melaka in this dish gives it a smoky sweet flavor. This is not your typical taucu chicken!

Ingredients:
- 1 lb chicken thigh (cubed)
- 2 red / yukon potato
- 9 shallots
- 6 cloves of garlic
- 1 tablespoon soy sauce
- 1 tablespoon sweet soy sauce (kicap manis)
- 2 tablespoon soybean paste (taucu)
- 2 tablespoon gula melaka
- Salt to taste
Blend the garlic and shallots to a paste.
Heat oil and add in shallot/garlic paste and saute until fragrant.
Add in soy bean paste and chicken.
Add in soy bean paste and chicken.
Add in 1 cup of water and bring to a boil.
Add in potatoes.
Then, add in soy sauce, sweet soy sauce and gula melaka.
Simmer until sauce thickens. It took me about 40 mins.
Add salt to taste.
