Butternut Squash Penne
Butternut squash is a winter squash and I have been seeing them often these days.
Its puree is sweet and nutty - an excellent alternative for a regular marinara sauce.
The original recipe calls for pancetta. I can see how adding pancetta could create a distinctive salty contrast to the sweeter puree. I'll definitely try it out the next time!
This could almost qualify as a vegetarian dish except for the use of chicken broth. For pure vegetarians, use vegetable broth and I think it would taste just as good.

Meanwhile cook pasta in a boiling pot (about 6 minutes). I usually like adding some salt and oil to the boiling water.
I also love al dente pasta. Never overboil them! Then, drain the pasta. The original recipe suggested to keep a cup of pasta cooking liquid. However, I was being health conscious (haha) and used brown rice penne. As a result, my cooking liquid was more murky (than it usually is when using regular pasta) after it was done boiling the pasta. So, I discarded the cooking liquid. |
