Claypot Tofu and Mushroom
Tofu and mushrooms are my two favorite ingredients! Any tofu (oh except stinky tofu! haha) and any mushroom (enoki, straw, cremini, shiitake, beech, oyster, chanterelle, button)!
On our recent trip back to Melaka, George brought us to a "claypot" restaurant where they serve everything in a claypot. The simple dish of claypot tofu and mushroom was awesome. I wanted to try cooking it but I just couldn't quite figure out how they made the broth/sauce. Apparently, it is an "original flavor" broth, and I have no idea what that means. I tried googling, but none of the dishes from the online recipes look similar to what I had. The dish has soft tofu, is loaded with mushrooms and its broth is not too thick. It is slightly "plain" in taste, but that is also why it tastes the best. You taste the original flavor of the ingredients, I guess.
I made this dish with my own spin to it. Not similar to the one I had in Melaka, but oh well, good and easy enough. And hey, it's vegetarian too (minus the oyster sauce haha).

Ingredients:
3/4 lb of cubed (multi use) tofu (3/4 of a tofu packet) 4 cloves of garlic, minced 4 cremini mushrooms 75g of beech mushroom (3/4 of a packet) 100g of enoki mushroom (1/2 of a packet) 2 stalks of green onions (chopped diagonally) 2 red chilies 1 1/3 tablespoon oyster sauce 1 1/2 tablespoon soy sauce 1/2 teaspoon sesame oil Pinch of salt |
