Garlic Rosemary Roasted Potatoes
I was watching Food Tube few weeks ago and came across Jamie Oliver's PERFECT roast potatoes (that's really the name of the recipe!). I thought they look cute like scallops and needed to try the recipe! Right out of the oven, they are really really crispy on the outside and soft on the inside. The rosemary, thyme and garlic adds a wonderful flavor. Must try recipe!

Peel the potatoes and cut it to your desired size. I halved / quartered the potatoes I have (depending on the size). The original recipe calls for the twice the size of a squash ball.
I soaked the peeled potatoes in cold water while peeling and cutting them. Next, put them in a large pot, fill it up with water, season the water with salt and boil them. Cook for 5 min to parboil the potatoes. |
Now, this is the fun, most interesting and crucial part!
Gently mash the potatoes (you can use a potato masher; I just used the back of a slotted ladle) to increase the surface area of the potatoes in contact with the pan. This helps to make the potatoes extra crispy! Add in the olive oil mixture. Then, bake them for another 30 minutes or until you think they are ready :D |
