Mushroom and Asparagus Risotto
I have been wanting to eat risotto and finally got a chance to make it! Risotto is an Italian rice dish cooked with broth and most of the time contains onions, butter, cheese and wine. YUM! Well, this recipe is alcohol-free, but it tastes just as good, haha. I used arborio rice because it has a creamier, starchy texture when done. Trader Joe's sell them in small boxes at a very reasonable price. I have watched multiple shows on TV on how to cook risotto and somehow the end results all look different. Some look creamy, some look more watery (almost porridge like), and some look drier...I was attempting to make mine slightly creamy and less watery and I think it tastes yummylicious! Definitely will try out other risotto recipes in the near future. It is not as time consuming as it seems and the reward-to-effort ratio is definitely very high! :D

I heated up some oil, added the onions. Once the onions become soft (but not brown), I tossed in the sliced mushrooms. In the meantime, I boiled 4 cups of chicken stock in a pot. I kept the chicken stock warm. After the onions and mushrooms are cooked, I added in the arborio rice and mixed them well for a few minutes.
