Kuih Keria / Mini Sweet Potato Donuts
Kuih Keria (also known as kuih gelang) are sweet potato donuts. They are commonly sold by roadside stalls in Malaysia. I remember buying them for RM0.20 each during lunch break at schools when I was a little kid many years ago :) Things were so cheap back then! They are great with coffee or pulled tea (teh tarik). These sweet potato donuts are sort of fluffy (not Kispy Kreme kind of fluffy though) in the middle but yet has some bite to them and are crispy/crunchy at the outside with the caramelized sugar.
I steamed the cubed sweet potatoes for about 15-20 minutes or until they are soft. To check, insert a fork through the sweet potatoes. If they break easily, they are done. You want the sweet potatoes to be soft so that we can easily mash them.
Next, I mashed the sweet potatoes with a fork and added a pinch of salt. Then, I added in the wheat flour and mixed them evenly. |
