Butter Prawn
I was craving for butter prawn badly and I found an awesome recipe from Nyonya cooking.

Ingredients:
- 1/2 lb prawns (deveined)
- Some butter
- 100g desiccated coconut/fresh grated coconut
- 1 teaspoon of soy sauce
- 1 teaspoon of sugar
- 1/2 teaspoon of salt
- 2 cloves of garlic (minced)
- 1 shallot (minced)
- 3 bird eye chilies (sliced into small pieces)
- 2 stalks of curry leaves
- Some corn flour / starch to fry the prawns
Start by toasting some desiccated coconut in a pan under low heat. I couldn't find any fresh grated coconut, and so I had to make do with desiccated coconut.
You would need to really watch this. It browns fast!
You are looking for a light brown color in your toasted coconut.

You would want to start by cleaning and deveining the prawns. Else, they might taste bitter.
Then, lightly coat the prawns with cornstarch. I think this is a really important step in making the prawns crispy.

Fry the prawns in a pan. Be careful not to overcook them.
Melt butter, fry garlic, shallots, curry leaves, bird eye chilies until fragrant.
Season with salt and sugar.
Add in the prawns, toasted coconut and soy sauce.
Serve it when it's hot.
Yum yum.
p/s: For this recipe, I bought 10 bird eye chilies from an Indian grocery store. When weighing the chilies, the weigh scale shows 0g (bad precision! haha). The store owner ended up giving me the chilies for free :)
