Crispy Seaweed Crackers
I was introduced to this snack a few years ago. My mum insists that it is a really easy snack to make and hence not much point in spending $$ buying them ready made. Seaweed crackers require very few ingredients, are easy to make and delicious to savor. This is especially popular as a Chinese New Year snack. I think of it as the Chinese version of Lays potato chips. You can finish a whole tupperware of it at one go! Well, if you think about it, it is healthy too, minus the deep frying part :)
Deep fry the seaweed crackers. It only takes 5 seconds or so, and they tend to burn easily!
I also noticed that crackers with 2 layers of spring roll sandwiching a seaweed turns out flat after frying. Pieces of seaweed crackers with only one layer of spring roll tends to curl. My engineering mindset tells me that this is due to the difference in the thermal coefficient expansion of the different ingredients on the outer layer. LOL. Also, if you cut the seaweed crackers into bigger sizes, they tend to curl less. But then again, I think curled seaweed crackers are the best! |
