Crispy Apam Balik (Peanut turnover pancake)
Apam balik, or what I call as "Ban Jian Kuih" is one of my favorite kuih (snack) in Malaysia! It is a turnover pancake with typical fillings like peanut and corn. There are two different versions of apam balik, one which is soft and thick; the other which is crispy and thin. This apam balik is nowhere close to what we get from roadside stalls in Malaysia, but suffice to satisfy my craving.
p/s: I bought cream corn for this recipe when I was 7 months pregnant! Never got to it until today; baby O is already 7 months old! Luckily my can of cream corn has not expired! Haha :)

I lightly oiled a pan and scooped a ladle of batter into the pan. Then, here's what we need to do; use a spoon (or the ladle or whatever utensil you have) to quickly spread a thin batter around, especially to the sides of the pan. This is going to turn out to be the crispiest part after it is done!
A pan with higher sides works best! |
