Baked Chicken Pasta
Pasta is always a quick fix for a weeknight! You'll likely find the ingredients needed in your pantry or refrigerator. Even if you don't have all the ingredients you think you need, you can easily skip them and they still turn out fine. To make it "fancier", I decided to bake my pasta. Add lotsa cheese, top wih breadcrumbs and more cheese and butter and you turn any dish into a sinful fantastic one! You could use fresh herbs like fresh parsley et, but I don't have any of them at hand and I settled for dried herbs. I also used fusilli (looks like rotini to me!) because I think they "hold the sauce better". Did I also mentioned I used brown rice & quinoa fusilli but they tasted just like the white wheat fusilli with all the cheese in the casserole!

I boiled the pasta in boiling water for about 5 min. I wanted the pasta to be chewier than al dente because we are baking them in the oven later on.
I then heated up some oil in a pan, added in the sliced red onions, followed by minced garlic and chicken. The chicken does not have to be cooked through, but it will be good if it is 75% done. I then added in the canned of diced tomatoes, oregano, thyme and parsley. Stir to combine the ingredients. |
