INGREDIENTS:
- One slab of uncut pork belly
- 1 tablespoon sea salt (for marinading the skin of the pork belly)

- 1 tsp sea salt
- 1/3 tbsp five-spice powder
- 1/4 tsp white pepper powder
Rinse the pork belly and pat dry. Remove any visible hair on the belly.
We'll start off with the fun part.
STAB the surface of the skin with a knife!!
This allows the pork belly to release all moisture later on when baking to ensure a crispy top.

Marinade the pork belly:
1) Rub the marinade over the meat part of the pork.
2) Rub the skin with salt only
Leave it in the refrigerator *uncovered* over night. I know this sounds gross, but it helps to dry the skin thoroughly.

Bake the pork belly at 430F for 30 min.
Then, broil it at 390F for 30 min.
Lastly, max broil it for 15 min.
I use a roasting pan to bake the pork belly. First, I lifted the wire rack with 2 ramekins and filled the roasting pan with some water. I then placed the pork belly on the wire rack.
Because my pork belly is not of even height, I attempted to even up the height by placing aluminum foil under areas that are lower. This helps to broil the skin evenly. I highly recommend this.
In between baking sessions, check for areas on the skin that is still soft or not crackling. Poke the area with a bamboo skewer (at this point, you should be able to pierce through the skin with a bamboo skewer).

When the pork is nicely roasted (skin fully crackled), remove it from the oven and allow the meat to rest for about 15 minutes.
